Bình Bát , also known as Pond Apple, is a traditional Southeast Asian fruit notorious for its incredible aroma. For those of us here in North America the best comparison to its smell is a ripe Pawpaw. The texture around the seeds is pure cream, and the flavour is very unique: tart with limited sweetness, and a mild, yet deeply complex flavour.
This fruit is not going to be for everyone, but there is definitely something strangely addicting about it.
Bình Bát is a member of the Custard Apple family, so you can expect a similar ripening process to fruits like pawpaw, atemoya and cherimoya.
Preparation Ideas: wait until the fruit is soft and entirely yellow. But it open like you would any custard apple and enjoy the flesh around the seed (don't eat the seeds). Bình Bát is commonly used in Southeast Asian drinks as an aroma enhancer.
