Purple asparagus is known to be a little more nutty and sweet than green asparagus. This is because it normally has about 20% more sugar packed in there. While the outside is purple the inside is still green. Cook it for too long and the purple will come off. It's not a trick - it's just nature sabotaging your colour coordinated dinner.
