Mat and Dorothee's flour is stone milled at their farm. Made with ingredients grown by them and their neighbours certainly makes for a very special and unique flour. The flour is unsifted, so for a finer powder you can get your hands dirty and do the sifting yourself!
The rye flour is great for sour dough, and the spelt flour includes bran. In order for a more fluffy dough you can sift the bran out. Mat and Dorothee include bran in their flour for a little extra healthy kick.
